Rico's Signature Creamy Italian Dressing
1.5 oz. Balsamic Vinegar
3 oz. Red Wine Vinegar
1 ½ Tbsp. of Parmesan
1 Tbsp. of Dry Parsley
8 Cloves of Fresh Garlic
1 Tbsp. of Dijon Mustard
1 Tsp. of Salt
1 ½ Tsp. of Pepper
2 Egg Yolks (use good quality eggs)
12 oz. of Olive oil (Rico uses Corto La Padella®)
Put all ingredients in a food processor or blender, except the oil.
Slowly add oil to emulsify.
Refrigerate and enjoy!
Dressing is best tossed into the salad.
It is delicious as a dip for your favorite vegetables or breadsticks.
